If I export my service with a Spring exporter will it still be a document centric web service?

That depends on what you mean with document centric.
It will be a document/literal style webservice.

Document centric (how I understand it) would be your app dealing with (org.jdom.)Document objects rather than your application objects. I think you can do that either if you expose methods via Spring exporter that return Document and have a single parameter of type Document, but I haven't tested that.
